From the looks of those, the wheels must have a larger than stock (63.3mm) center-bore, which is common for multi-fit after-market wheels. You actually could make a wheel-hub-centric spacer for those in any thickness. The down-side is that they'd only work for those wheels. You are correct. The wheel center bore is 76mm or something like that. As for a spare, I'm still carrying the OEM spare for the moment. The overall diameter of my 17" wheel/tire combo is 24.1, so minimal difference from the original diameter the spare was designed to substitute for. The biggest issue with using the spare is the brakes I'm running. In the rear, I'm running the Rapido (SSBC) rear disc conversion, so if a rear blows, I simply pull the wheel and spacer and use the spare. But in the front I'm running JVAB's setup with the Wilwood calipers and 283mm rotors. So if a front blows, it's a bit more trouble... I'd have to replace a rear tire with the spare and then swap the blown front with the good rear.
Luckily, I have yet to have suffered a true blowout when running my 17s. And I suppose if I was feeling lazy, I could just call AAA.

Spacers: 8mm fronts, 17.5mm rears
Tires: 215/40/17s Continental ContiExtremeContact
Relevant suspension/chassis info: Spax -25mm springs & adjustable dampers (not coilovers), ARP extra long wheel studs
Body modifications: Cossie arches, but no modification of wheelwells or fender arches. No rolling or cutting.
